Date Energy Balls Recipe (with Step by Step Photos)
These date energy balls are one of my favorite snacks at home, as they come together in less than 10 minutes and it is also a great way to add more seeds and nuts to our diet! This recipe is also super flexible as you can add nuts and seeds of your choice and as per the availability.

16-18 Medjool Dates, pitted |
2 tablespoons Pumpkin Seeds |
2 tablespoons Sesame Seeds |
2 tablespoons Sunflower Seeds |
2 tablespoons Flax Seeds |
1/4 cup Almonds |
1/4 cup Cashew nuts |
1/4 cup Pistachio |
Directions:
- Remove the seed from the dates. Cut the date lengthwise with a knife, open it with your fingers, and take out the hard seed.
- Take 2 tablespoons pumpkin seeds, 2 tablespoons sesame seeds, 2 tablespoons sunflower seeds, and 2 tablespoons flax seeds in a pan and roast them until lightly golden, for approx. 3-4 minutes.
- Transfer the roasted seeds to a plate.
- Add 1/4 cup almonds, 1/4 cup cashew nuts, and 1/4 cup pistachio in the jar of a chopper or a blender.
- Don’t blend it, just pulse it a few times so the nuts are roughly chopped. Transfer the roughly chopped nuts to a big bowl.
- Add pitted dates to the jar of a blender and blend until smooth or finely chopped.
- Add dates and roasted seeds to the same bowl.
- Mix well until combined. If it is hard to mix, just microwave the mixture for 30 seconds or heat the mixture in a pan on the stovetop for 1-2 minutes. The heat will make the date soft and that will make it easier to mix and make the small balls.
- Make small balls from the mixture. Date Energy Balls with Mixed Seeds and Nuts are ready to enjoy. They stay good for 2-3 weeks at room temperature.

Tips and Variations:
- Add 1/2 teaspoon cardamom powder or 1 tablespoon cocoa powder (with dates) for a chocolate flavor.
- For variation, add roasted shredded coconut or other nuts like walnuts, pecans, etc.
