Palak Paneer is a popular North Indian curry made of blanched spinach and soft paneer. This restaurant style spicy Punjabi palak paneer recipe prepares a yummy curry by cooking shallow fried paneer cubes in a healthy spinach gravy, which is sautéed with finely balanced curry spices in aromatic ghee. Additionally, this recipe uses milk cream to bring in rich creamy texture. Serve this spinach paneer curry with equally delicious garlic naan for a scrumptious meal.

Palak Paneer Recipe In Hindi (हिन्दी में पढ़े)
Palak Paneer Recipe In Gujarati (ગુજરાતી માં વાંચો)
Ingredients:
1 large bunch or 4 cups chopped Spinach (Palak)
3/4 cup (approx. 150 gm) Paneer (cubed into 1/2-inch pieces)
1-2 Green Chillies, seeded and chopped (or to taste)
1/2 teaspoon Cumin Seeds, optional
1 large Onion, finely chopped (approx. 1/2 cup)
1 teaspoon Ginger Garlic Paste (or crushed)
1 teaspoon Lemon Juice
1/2 teaspoon Kasuri Methi (dry fenugreek leaves), optional
2 tablespoons Fresh Cream
1/3 cup Water
2 tablespoons Oil + 1 tablespoon Butter
Salt to taste
Directions:
  1. step-1
    Clean and wash spinach in water to remove any soil or impurities. To blanch the spinach, boil it in salted water for 2 minutes.
  2. step-2
    Drain it using a big perforated spoon or a strainer.
  3. step-3
    Immediately transfer drained spinach into cold water and keep for a minute.
  4. step-4
    Drain excess water and transfer blanched spinach to the medium size jar of a mixer grinder. Add green chillies and grind until smooth puree. If required, add few tablespoons of water while grinding.
  5. step-5
    Heat 1 tablespoon oil in a non-stick pan or kadai over medium flame. Add paneer cubes and shallow fry them until the sides turn light brown. Transfer them to a plate and keep aside. You can remove excess ghee or oil from it by placing them on absorbent kitchen paper napkin.
  6. step-6
    Heat remaining 1-tablespoon oil and 1-tablespoon butter together in the same pan over medium flame. Add cumin seeds and saute them for 30 seconds. (If you don’t like cumin seeds, you can avoid it.) Add finely chopped onion and stir fry until it turns translucent. Add ginger-garlic paste and stir fry for 30 seconds.
  7. step-7
    Add spinach puree and salt. Stir and cook for 2-3 minutes.
  8. step-8
    Add 1/3 cup water. Mix well and bring it to a boil. Stir occasionally in between.
  9. step-9
    When gravy starts to boil, add shallow fried paneer cubes and cook for 3-4 minutes.
  10. step-10
    Add lemon juice, kasuri methi and mix well. Turn off the flame and mix milk cream.
  11. l_step
    Transfer it to a serving bowl and serve with tandoori roti, kulcha or butter naan.
Tips and Variations:
  • Make best palak paneer with tofu by adding shallow fried tofu cubes. If paneer cubes are not available and you still want to enjoy the goodness of this Punjabi curry, prepare it with only tofu cubes.
  • If you want to have very soft paneer that mixes well with gravy of palak, soak them in hot water for 10 minutes after shallow frying.
  • Add milk cream only after turning off the flame as it may curdle if added before.
  • Add more water in step-8 and adjust seasoning according to taste to make more amount of gravy in curry.
  • This simple and easy recipe uses shallow fried paneer cubes to improve the flavor and texture of curry. However, you can avoid shallow frying them to reduce the calorie of this dish.
Taste: Creamy and spicy
Serving Ideas: Apart from serving tasty Punjabi palak paneer gravy with various Indian breads like plain paratha, butter naan and lachha paratha, it can also be enjoyed with steamed rice or jeera rice and boondi raita.

Can I use frozen paalak for paalak paneer? If yes then how?

Response: Hello Pushpa, I am not able to give you the answer as I have never made palak paneer using frozen palak. However, you can cook the spinach gravy (palak gravy from this recipe) and then freeze it for later use.

Why don’t you add tomatoes ?

Response: This recipe doesn't require tomatoes. since palak is pureed to make a gravy. However, if you like tangy taste of tomato, you can add 1/4 cup tomato pieces in the puree.

Whenever i make this recipe there is a particular odour of palak which spoils the recipe... please help.

Response: Hello Anita, blanch the spinach properly and don't forget to add kasuri methi to reduce the odor of spinach.

I was referring to Béchamel sauce (aka white sauce), made from a white roux (butter and flour) and milk.

Response: Hello Nandu, which white sauce are you talking about? You can use the fresh malai/ cream or sour cream in this recipe. If it is not available, just skip it.

This is one of the best recipes for homemade Palak Paneer I have tried. I think the Fenugreek powder is a must! It tasted almost the same as the stuff I get at my local Indian restaurant. I have trouble getting the Paneer to pan fry and not stick to the pan, any tips?

Response: Hello Cheryl Dawson, thank you for trying the recipe. Use a non-stick pan to prevent paneer from sticking to the pan. And yes you are right about the dried fenugreek leaves (kasuri methi) (don't use the fenugreek seeds powder), it gives the restaurant like flavor.

Can I fry the spinach puree after grinding?

Response: Hi Maria, I didn't get your question. Did you mean shallow fry or deep fry? Because, we shallow fry the puree for couple of minutes in step-7.

Response: Hi, you can not add curd instead of fresh cream. If fresh milk cream is not available, then skip it.

Response: Hi Manisha, if kasuri methi is not available then skip it. Do not add sowa (suva bhaji) because it has strong flavor and it will ruin the taste.

Response: Hi Anusha, this recipe is for 2 serving so if you want to prepare it for 5-6 members, multiply all the ingredients by 3.

Please do NOT add Kasuri methi. Palak has different aroma and taste which would mess with it.

If quantity of spinach is doubled, should the blanching time be increased accordingly?

Response: Hi Bhavna, if you double the quantity of spinach, time required to blanch the spinach remains same. To blanch it in large quantity, either blanch it in small batches or in a large vessel.

Response: Hi Nandhini, you can not add any other item as an alternative of fresh cream (or malai). If you do not have cream, then skip it. It will taste good however you will not get the creamy taste.

Hi I tried ur recipe it was awesome but the colour of my gravy was not the same as yours, it was very light green... can we use tomatoes in palak paneer

Response: Hi Bhavana, thanks for trying the recipe. Yes you can add tomatoes (pureed or crushed tomatoes) in step-6. I think the photo looks dark in step-10 because main focus was on the white creme while taking the photograph and camera made it look dark green.
