Preparation Time:5 minutes
Cooking Time:15 minutes
Serves:10-14 laddu
Ingredients: |
1 cup fresh shredded coconut or desiccated Coconut (no brown skin) + 1/4 cup for rolling |
1/2 cup Condensed Milk |
1/2 cup Mango Puree (fresh or canned) |
A pinch of Cardamom Powder, optional |
Directions:
- Canned mango puree is used in this recipe. If you are using fresh mango puree, strain it through a fine mesh strainer before using it.
- Take 1 cup of desiccated coconut in a saucepan or a kadai.
- Roast it over medium flame for 2-3 minutes, stir continuously to prevent the coconut from burning.
- Reduce the flame to low. Add 1/2 cup fresh or canned mango puree and 1/2 cup condensed milk.
- Mix well.
- Stir and cook until the mixture turns thick and starts to leave the sides of a pan. It will take 7-8 minutes over low-medium flame.
- You can see as the mixture has started to turn into a big lump. Turn off the flame. Let the mixture cool down until a little warm, it will take approx. 5-10 minutes. (To speed up the process, transfer the mixture to a plate to cool down.)
- Take a small lemon-sized portion of the mixture and roll it out into a small ball. Put it on a plate. Make the balls in the same way from remaining mixture.
- Take 1/4 cup of desiccated coconut in the same pan. Put all the laddus in the same pan. Tilt the pan a little bit up and down in a circular motion for a few times or until all the laddus are coated well with coconut. (OR take desiccated coconut in a small plate and one by one roll each laddu in it.)
- Let the laddus cool down to room temperature.
- Mango Coconut Laddus are ready. Store them in an airtight container. They stay good for 5 days in the refrigerator.
Tips and Variations:
- If you are using fresh mango – choose the ripe sweet mango as the flavor of the laddu depends on the taste of the mango. Don’t forget to strain the fresh mango puree before using.
- For variation, add 1/4 cup almond flour(almond powder) or 2 tablespoons milk powder (for mawa/khoya flavor).
