Paneer Sandwich
Do you want something quick yet healthy for breakfast that also tastes delicious? Try this paneer sandwich recipe. Making stuffing is the easiest part of this recipe. Just mix crumbled paneer with your choice of chopped veggies and spices to make the stuffing. It hardly takes 5 minutes, and not only that you can even prepare it in advance (previous night) and keep it in the refrigerator to make the sandwiches next day in the morning.
Ingredients:
4 large or 6 small Sandwich Bread Slices
1/4 cup Green Chutney
1 cup crumbled or grated Paneer
1/3 cup grated Mozzarella Cheese or Cheddar Cheese or Processed Cheese (optional)
3 tablespoons finely chopped Green or Red Bell Pepper (capsicum)
3 tablespoons grated or finely chopped Carrot
1/2 Green Chilli, finely chopped (optional)
2-3 tablespoons finely chopped Cilantro (coriander leaves)
1/8 teaspoon Black Pepper Powder
1/4 teaspoon Chaat Masala Powder
1/2 teaspoon Cumin-Coriander Powder
Salt, to taste
2-3 tablespoon Butter, softened
Directions:
  1. Make green chutney by following this recipe.
  2. Take 1 cup crumbled or grated paneer in a medium bowl. Add 3 tablespoons finely chopped green or red bell pepper (capsicum), 3 tablespoons grated or finely chopped carrot, 1/2 green chilli, finely chopped (optional), 2-3 tablespoons finely chopped cilantro (coriander leaves), 1/3 cup grated mozzarella cheese or cheddar cheese or processed cheese (optional), 1/8 teaspoon black pepper powder, 1/4 teaspoon chaat masala powder, 1/2 teaspoon cumin-coriander powder and salt to taste.
  3. Mix well.
  4. Take 2 bread slices. Spread butter on one side and approx. 1-2 teaspoons green chutney evenly on another side of each bread slice. Keep the bread slice with green chutney side up on a plate.
  5. Put 2-3 tablespoons paneer mixture on one slice.
  6. Cover it with another bread slice on which we have spread the chutney. Make the remaining 2 sandwiches by following the same process. Preheat a toaster (or a grill) to make sandwich. When it is ready, place the sandwiches in the toaster.
  7. Toast until golden and crispy.
  8. Remove them from the toaster. Spread some butter on top of that if you like. Cut them using a knife into two triangles. Paneer sandwich is ready for serving. Serve it with green chutney or tomato ketchup as an afternoon snack.
Tips and Variations:
  • If you are using large sandwich bread slices then you can make 2 sandwiches and if you are using small sandwich bread slices, you can make 2 sandwiches.
  • For variation, add grated beetroot, finely chopped onion, finely chopped tomato, etc.
  • You can even cook the paneer with tomato, onion and spices (paneer bhurji) and then make the sandwich.
Taste: Mild Spicy
Serving Ideas: Serve paneer sandwich in the breakfast. You can also pack this sandwich with ketchup in kids lunchbox.
