Vegetable Salad
Apart from fresh vegetables, the simple salad dressing gives a new dimension to this colorful vegetable salad. Also, this recipe does not mix all ingredients, instead, it requires arranging veggies and fruits in a specified order to make it visually tempting.
Ingredients:
6-8 Salad Leaves (lettuce or spinach)
1 Tomato, chopped
1 Onion, sliced
1 Carrot, sliced
1/2 Zucchini or Cucumber, chopped
1/2 Red or Yellow Bell Pepper (capsicum), cut into long strips
For Salad Dressing:
1½ tablespoons Olive Oil
2½ tablespoons Lemon juice
1/4 to 1/2 teaspoon Black Pepper Powder
Salt, to taste
Chaat Masala Powder, to taste
Directions:
  1. For salad dressing, mix 1½ tablespoons olive oil, 2½ tablespoons lemon juice, 1/2 teaspoon salt, 1/4 teaspoon black pepper powder and 1/4 teaspoon chaat masala powder in a small bowl.
  2. Cut all the vegetables .
  3. Arrange lettuce or spinach leaves in a large serving plate.
  4. Arrange all the chopped vegetables as shown in the picture.
  5. First arrange red bell pepper then zucchini (or cucumber), carrot, tomato and onion.
  6. Pour salad dressing over the prepared salad using a spoon.
  7. Keep vegetable salad in a refrigerator before serving. Serve it chilled.
Tips and Variations:
  • Use yellow capsicum, yellow sweet corn and purple cabbage to make a rainbow salad.
  • Feel free to use vegetables of your choice to make this salad.
  • Add fruits like apples, blueberries and pomegranate seeds to make it more flavorful.
  • For variation, add crushed or minced garlic in salad dressing.
