Almond Flour Sukhdi
This is a simple small batch recipe of protein packed Almond Flour Sukhdi, which can be made with only 5 ingredients in less than 15 minutes. This version uses almond flour as the main ingredient along with ghee and jaggery (gud) and is flavored with cardamom powder.
Ingredients:
1 cup Almond Flour (badam powder)
1/3 cup Whole Wheat Flour
1/2 cup Ghee (clarified butter)
1/2 cup Jaggery, (if using hard jaggery, chop or grate it)
1//2 teaspoon Cardamom Powder
Mixed Nuts (roughly chopped), optional
Directions:
  1. If you are using hard jaggery, grate it or finely chop it.
  2. Heat 1/2 cup ghee in a thick-based kadai (pan) over low-medium flame.
  3. Once the ghee melts, add 1/3 cup whole wheat flour.
  4. Add 1 cup almond flour (badam powder).
  5. Mix well.
  6. Roast the flour until it turns golden, keep stirring continuously to prevent any burning. It will take approx. 7-8 minutes.
  7. Turn off the flame. Look at the color, it’s a perfect golden brown. Add 1/2 teaspoon cardamom powder and 1/2 cup jaggery, (if using hard jaggery, chop or grate it).
  8. Mix well until the jaggery melts.
  9. Transfer the mixture to a deep tray (or a small square baking pan). Flatten the top surface with the backside of a spatula or bowl.
  10. Sprinkle roughly chopped mixed dry fruits over it. Press them gently.
  11. Let it set for around 30 minutes at room temperature. Cut it into small squares or diamonds when the sukhdi is a little warm.
  12. Once the sukhdi cools down completely, transfer it to an airtight container. Enjoy the sukhdi warm or cold as per your preference.
Tips and Variations:
  • You can use hard or soft jaggery as per the availability. If you are using hard jaggery, finely chop or grate it.
  • If you use only almond flour, sukhdi may turn crumbly. To prevent this, 1/3 cup whole wheat flour is added in the recipe.

Serving Ideas: Pack sukhdi in kids lunch box with other snacks or serve it with other savory snacks like methi puri, farsi puri, poha chivda, etc.
