Cucumber Juice
Cucumber is a good source of vitamin K, vitamin C, Potassium, Magnesium, and Manganese and also it is rich in antioxidants. It has 96% water content and is also low in calorie so this cucumber juice helps in weight loss when you consume it instead of any sweet juice, soda, or any sugary drink.
Ingredients:
1/2 Cucumber (peeled, if you prefer)
1 stick of Celery, optional
1/2 small Lemon or Lime (approx. 1½ tablespoons), or to taste
5-7 leaves of Fresh Mint, optional
A pinch of Salt, optional
1/2 cup Water
2-3 Ice Cubes, for serving
Directions:
How to Make Juice In a Blender (without juicer):
  1. Wash the cucumber and remove the stem. If you prefer, peel the cucumber (if you are using an organic cucumber, no need to peel it). Cut it into large pieces. Cut a celery stick into 3-4 pieces.
  2. Add cucumber pieces, celery pieces, lemon juice, 5-6 mint leaves, and 1/2 cup water in a blender.
  3. Blend until smooth.
  4. If you are making the juice without peeling the cucumbers, strain it using a fine mesh strainer (or a cheesecloth). Place a large strainer over a bowl and pour the prepared juice over the strainer.
  5. Press it using a large spoon to get the juice from it. Discard the fibrous pulp. If you prefer, you can consume the juice without straining.
  6. Cucumber juice is ready to serve. Place 3 ice cubes in a glass. It is always recommended to consume the juice immediately to get maximum benefits. You can also store it in the refrigerator for up to 1 day.
How to Make Juice In a Juicer:
  1. Turn on the juicer and put a container under the nozzle.
  2. Process all the ingredients except lemon through the juicer.
  3. Add lemon juice and salt to the prepared juice. Add water if you prefer the diluted juice.
Tips and Variations:
  • For variation, add 1 teaspoon chopped ginger and 2-3 tablespoons fresh coriander leaves (cilantro).
  • Always taste the cucumber for bitterness before making the juice.

Serving Ideas:  Serve cucumber juice in the morning or in the afternoon during hot summer days.
