Sweet Potato Tortilla (Purple)
Here is a super simple recipe to make sweet potato tortillas from scratch. These purple sweet potato tortillas are high in antioxidants like blueberry and perfect for quesadillas, veggie wraps, and burritos.
Ingredients for Tortilla:
3/4 cup Orange or Purple Sweet Potato, boiled and mashed (approx. 1 medium sweet potato)
1 cup Plain Flour or Whole Wheat Flour
1/2 tablespoon Oil, optional
Salt, to taste
Directions:
  1. Cut 1 sweet potato into 2-3 pieces and place it on a colander.
  2. Take one pot and pour 1 glass of water in it. Place a colander inside it. Cover it with a lid and steam cook sweet potatoes for 15-20 minutes or until fork tender.
  3. Remove the boiled sweet potatoes and peel them.
  4. Mash them with a fork when they are a little warm.
  5. Add 1 cup Whole wheat flour or plain flour, 1/2 tablespoon oil, and salt.
  6. Make the soft and smooth dough like chapati dough. If required, add water to make the dough.
  7. Cover the dough and let it rest for 15-20 minutes.
  8. Take the small lemon sized dough, coat it with dry plain flour, and roll it out on a rolling board into a round-shaped tortilla (like roti). If required, sprinkle some dry flour while rolling to prevent sticking.
  9. Roast the tortilla on the pan or tawa until brown spots appear on both sides. It will take approx. 45 seconds-1 minute on each side over medium flame.
  10. Stack the tortillas and keep them covered in a cloth or in a container to keep them soft.
Tips and Variations:
  • As per the availability, you can use purple sweet potato or orange sweet potato.
  • You can microwave (pierced potatoes for 5-7 minutes) or bake the sweet potatoes (at 400 F for 30-40 minutes) instead of steaming.
Taste: Mild salty with soft texture
Serving Ideas:You can use these tortillas to make tortilla wrap with stir fried veggies, beans, and cheese or sweet potato quesadilla with black beans and cheese.
