Directions:Cut 1 sweet potato into 2-3 pieces and place it on a colander.
Take one pot and pour 1 glass of water in it. Place a colander inside it. Cover it with a lid and steam cook sweet potatoes for 15-20 minutes or until fork tender.
Remove the boiled sweet potatoes and peel them.
Mash them with a fork when they are a little warm.
Add 1 cup Whole wheat flour or plain flour, 1/2 tablespoon oil, and salt.
Make the soft and smooth dough like chapati dough. If required, add water to make the dough.
Cover the dough and let it rest for 15-20 minutes.
Take the small lemon sized dough, coat it with dry plain flour, and roll it out on a rolling board into a round-shaped tortilla (like roti). If required, sprinkle some dry flour while rolling to prevent sticking.
Roast the tortilla on the pan or tawa until brown spots appear on both sides. It will take approx. 45 seconds-1 minute on each side over medium flame.
Stack the tortillas and keep them covered in a cloth or in a container to keep them soft.
Tips and Variations:- As per the availability, you can use purple sweet potato or orange sweet potato.
- You can microwave (pierced potatoes for 5-7 minutes) or bake the sweet potatoes (at 400 F for 30-40 minutes) instead of steaming.
Taste: Mild salty with soft texture
