Cheese Breadsticks from Pizza Dough
Have you ever tried to make the cheese breadsticks at home? They taste better than takeout and it has only four easy steps – first, make the dough, shape it into a rectangle or square, then add toppings of mozzarella cheese and seasonings, and bake it.  The process is simple and easy except for making dough which takes a little bit of time and needs some cooking knowledge. You can even use the pizza dough to make these breadsticks.
Ingredients for Dough:
2 cups Maida (All Purpose Flour)
3/4 cup Warm Water
1 1/8 teaspoon Active Dry Yeast
2 tablespoons Milk Powder
1 teaspoon Sugar
1/2 teaspoon Salt
1½ tablespoons Olive Oil or any Oil for dough + more for greasing
Cornmeal or Semolina(sooji/rava), for sprinkling, as needed (or use parchment paper)
For Toppings:
1¼ cups grated Mozzarella Cheese or Pizza Cheese (or as required)
1 tablespoon melted Salted Butter
1 teaspoon minced Garlic, optional
1/2 teaspoon Pizza Seasonings (dried Basil  & Oregano)
1/4 teaspoon Red Chili Flakes, optional
Directions:
  1. Make the dough by following the pizza dough recipe (if you want to double the recipe) or follow the below-given steps.
  2. In a bowl, take 3/4 cup warm water, 1 1/8 teaspoons active dry yeast, 2 tablespoons milk powder, and 1 teaspoon sugar. Mix well and rest it for 5-6 minutes.
  3. After 5-6 minutes, you will notice the foamy layer on top of the mixture because of the yeast activation.
  4. Take 2 cups maida (all purpose flour) and 1/2 teaspoon salt in a large bowl. Mix well.
  5. Add proofed yeast mixture and 1½ tablespoons oil; mix well.
  6. The dough mixture will be sticky at first but as you keep kneading it will be smooth and soft in a few minutes. Knead the dough for 4-5 minutes. You can also use a stand mixer to knead the dough.
  7. Divide the dough into 2 equal portions. Sprinkle cornmeal or semolina(rava/sooji) on the flat surface and spread the dough using your hands or a rolling pin into a 1/3 inch thick square or a rectangle. You can even spread the dough on a parchment paper.
  8. Place it on a baking tray greased with olive oil. Spread some olive oil on the top surface of the dough using a brush.
  9. Cover the tray with a towel or a plate and place in a warm area. Let them rise for 1 hour. On each rectangle, spread some melted salted butter evenly.
  10. Preheat oven to 475F (245 C).Top each one with approx. 1/2 cup to 2/3 cup shredded mozzarella cheese, ½ teaspoon minced garlic, pizza seasonings, and red chili flakes.
  11. Bake it at 475F (245 C) for 8-10 minutes or until the cheese is melted and the crust turns golden brown.
  12. Remove it from the oven. Let it sit for 3-5 minutes and then cut into slices. Cheese Breadsticks are ready to serve.
Tips and Variations:
  • Add toppings of your choice like sweet corn and diced bell pepper for variation.
